Bring a large pot of water to the boil. Salt it and add the pasta. Cook to al dente, about 10 minutes or according to package instructions.
While the pasta cooks, gently heat the garlic in the olive oil until the garlic is yellow. It’s important to keep the heat low so that the garlic doesn’t burn. Add the peperoncino for a minute, then remove the garlic.
When the pasta is ready, drain, and toss with the oil and parsley. Serve warm or at room temperature.
